Lemon Chicken Soup
Ingredients:
6 cups low sodium chicken broth
5 tablespoons chicken broth base
1 cup carrots chopped
1 cup onion chopped
1 cup celery chopped
juice from 2 lemons
1/2 cup flour
1/2 cup butter (melted)
(these are thickening agents)
2 cups chopped chicken (I used a rotisserie from Kroger)
7 egg whites
1 1/2 cups orzo rice
1/2 tsp oregano
1/2 tsp garlic salt
1/2 tsp white pepper
-Combine chicken broth, chicken base seasoning, onion, celery, and carrots, and lemon juice.
-Bring mixture to a boil, then simmer for 20 minutes
-Add flour and butter as well as the Orzo and simmer for another 10 minutes
-Mix egg whites until light in color (I used my Kitchen Aid but this can be done by hand)
-Scoop out 1 cup of the soup and gradually incorporate into the egg whites while stirring.
-Add egg / soup mixture to stockpot slowly while stirring.
- Season to taste with oregano, salt, garlic powder or any herbs you like.
