Mango Salsa

INGREDIENTS:

2 tbsp olive oil
4 (6-ounce) salmon fillets, skin-on
2 tsp. garlic salt
1 tsp. black pepper
1 tsp. onion powder
1 tsp. cayenne pepper
1 recipe Fruit Salsa, recipe follows

DIRECTIONS:
1. Preheat grill to medium heat.
2.Brush both sides of the salmon with the olive oil.
3. Season fish with salt, black pepper, onion powder and cayenne pepper.
Place the fish meat side down on grill for three minutes.
4. Turn the fish to skin side down for an additional 3-5 min
5. Remove the fish from the grill and serve with the fruit salsa spooned over the fish.

STRAWBERRY MANGO SALSA INGREDIENTS:

3/4 c. pineapple, diced
½ green apple diced
½ small red onion, diced
1 jalapeno, stemmed, seeded and diced
1/2 c. strawberries, chopped
1 medium mango, chopped
2 tbsp freshly squeezed orange juice
1 tbsp freshly squeezed lime juice
¼ tsp salt
¼ tsp black pepper

DIRECTIONS:

1. Dice pineapple, green apple, red onion and jalapeno.
2. Chop mango and strawberries.
3. In a medium bowl, combine all fruit, juice and remaining ingredients.
4. Cover with plastic wrap and place in refrigerator for 20 to 30 minutes before serving.
