Mexican Quinoa
INGREDIENTS
1 c quinoa
2Tbsp Olive Oil
1 tsp minced garlic
1/2c. sliced scallions
1 ½ c. canned corn
1 15oz. can black beans
1 whole tomato, diced
1 tsp. cayenne
1 tsp cumin
1tsp pepper
1 tsp garlic salt
1 tsp cumin
1 c. salsa
juice of 1 lime
½ avocado, sliced
DIRECTIONS
1. Cook quinoa according to package
2. While quinoa is cooking, in a separate skillet heat olive oil over medium heat.
3. Add garlic and sauté for 1 minute.
4. Add corn and scallions.
5. Sauté for 3 minutes, add black beans, tomato and spices.
6. Continue to cook for about 5 minutes.
7. Take mixture from heat and stir in salsa and lime. Combine with cooked quinoa.
8. Top with sliced avocado.
Serves 4
