Italian Chopped Salad
INGREDIENTS:
Dressing:
1/3 c. olive oil
Juice of 1.lemon
1 tbsp. distilled white vinegar
1 tbsp red wine vinegar
1 tbsp Dijon mustard
1 clove garlic, minced
¾ tsp. salt
¾ tsp black pepper
1.Combine lemon, white vinegar, red wine vinegar, garlic and Dijon mustard.
2.Whisk ingredients, gradually adding oil to mixture.
3.Season with salt and pepper to taste
Salad:
3 c. Romaine lettuce, chopped bite size
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 large tomato, chopped
½ c. red onion, chopped
½ c. chopped green olives
½ c. marinated (jarred) artichoke hearts, chopped
¼ c. banana pepper rings, chopped
1/3 c. Athenos brand crumbled reduced fat feta (optional)
Toss all ingredients together in large bowl, add dressing when ready to serve
Serves 4-6
