Roasted Vegetable Medley

INGREDIENTS:

1 small sweet potato, chopped into 1” chunks
1 red bell pepper, chopped into 1” chunks
1 medium zucchini, sliced into ½ inch slices
1 medium yellow squash, sliced into ½ inch slices
½ bunch of asparagus (approximately 8 spears, ends trimmed, chopped into 2 inch pieces)
½ red onion, chopped into large pieces
2 tsp Mrs. Dash seasoning, Original Blend
¼ c. Olive Oil

DIRECTIONS:

1. Pre-heat oven to 350°
2. Chop all vegetables and place in a large bowl.
3. Add oil and seasoning and toss ingredients together to evenly coat.
4. Pour vegetables into 9” x 13” roasting pan and place in heated oven for approximately 35 minutes or until desired tenderness.
