White Bean Salad

INGREDIENTS: (salad)

1-15oz. can cannelloni (white kidney) beans, drained
1 small tomato, chopped
2 hard-boiled egg whites, chopped
½ small red onion, diced
¼ c. pitted green olives, copped
2 tbsp. parsley, chopped

INGREDIENTS: (dressing)

2 tbsp. Olive oil
1 tbsp. white wine vinegar
½ tsp minced garlic
½ tsp black pepper
½ tsp salt

DIRECTIONS:

1. Toss all salad ingredients together in a large bowl, set aside.
2. To make the dressing, mix together vinegar, garlic, pepper, and salt in a small bowl. Whisk in olive oil until well blended.
3. Toss dressing with bean salad and marinate in refrigerator for about 2 hours.
