Asian Chicken Lettuce Wraps
INGREDIENTS:
2 lbs of chicken breasts or tenders- chopped into small pieces
2 tbsp olive oil
1 tbsp minced garlic
1 tbsp Mrs. Dash Southwest Chipotle seasoning blend
1tsp chili powder
½ tsp cumin
1- 3.5oz package of shitake mushrooms, rinsed, stems removed and sliced thin
1- 8oz can of water chestnuts, drained and chopped
½ red bell pepper, diced
½ green bell pepper, diced
4 scallions, chopped
1 tsp minced ginger root or 1 tsp ginger paste
½ c Hoisin sauce (located in Asian food section, healthiest option is Iron Chef Mu-Shu Hoisin, all natural/no preservatives)
1/2 large head iceberg lettuce, core removed, head quartered and leaves pulled apart
DIRECTIONS:
1. Pour olive oil in large skillet or wok and heat on medium/medium high heat.
2. Add garlic and cook for 1 minute.
3. Add chicken, Mrs. Dash, chili powder and cumin to the pan, coating chicken evenly with spices.
4. Stir fry chicken about 3 minutes covered.
5. Add mushrooms, cook 2 more minutes un-covered.
6. Add water chestnuts, peppers, scallions and ginger. Cook for an additional 3 minutes un-covered. 7. Add hoisin sauce, cook 2 more minutes, uncovered.
8. Remove from heat and let mixture stand about 5 minutes uncovered as sauce thickens.
9. **To serve, pile spoonfuls of mixture into lettuce leaves and wrap lettuce around filling
**Can also be served over a bed of rice
