Herbed Baked Chicken
INGREDIENTS:
4 boneless, skinless chicken breast halves
1/2 c. balsamic vinegar
1/2 c. olive oil
1/4 c .finely chopped fresh basil leaves
1/4 c. finely chopped fresh assorted herbs (we used rosemary, oregano and sage)
1/2 ts.p salt
1/2 tsp. black pepper
DIRECTIONS:
1. Pour balsamic vinegar in bowl and whisk in olive oil until emulsified.
2. Add freshly chopped herbs, salt and pepper and stir to combine ingredients.
3. Add chicken breasts to marinade, cover and refrigerate for 4 hours.
4. Pre-Heat oven to 400 degrees when 15 mins remain in marinade time
5. Heat 1 tbsp olive oil over med-high heat in skillet
6. Remove chicken from marinade and place in skillet to brown sides (about 3 mins per side)
7. Place chicken on baking sheet and bake in oven to finish cooking for about 25 mins or until internal temperature of thickest part of chicken is 165 degrees
