Raspberry Spinach Salad with Shallot Vinegrette INGREDIENTS (salad):

1- 90z bag of spinach
1 pt. of red raspberries
2 oz. goat cheese, crumbled
¼ c. toasted sliced almonds

INGREDIENTS (dressing):

½ c. chicken broth
¼ c. shallots, minced
2 tbsp. olive oil
1 tbsp. red wine vinegar
2 tsp Dijon mustard
2 tbsp parsley, finely chopped

DIRECTIONS:

Toss all salad ingredients together in a large bowl and set aside.
Whisk chicken broth, oil, vinegar, and Dijon in medium bowl.
Add minced shallots and parsley and stir until combined.
Toss dressing with salad when ready to serve.

Serves 4
