INGREDIENTS (Vinaigrette)

½ c orange juice
Juice of ½ lemon
2 tbsp. Dijon mustard
1 tbsp honey
2 tbsp olive oil
1 tsp black pepper


DIRECTIONS:

1. Combine all ingredients except olive oil in food processor and while blending slowly add olive oil until emulsified and set aside


INGREDIENTS (Salad)

1 lb jumbo scallops
2 tbsp olive oil
3 tbsp Mrs. Dash seasoning, (Southwest Chipotle variety)
1 pear, chopped
1 red bell pepper, chopped
1-15 oz. can of mandarin oranges, drained
1 bag of romaine lettuce

DIRECTIONS:

1 Add pear, red pepper and mandarin oranges to lettuce in large bowl Toss with vinaigrette until well coated and then refrigerate.
2. Evenly coat scallops with Mrs. Dash seasoning
3.Heat olive oil over medium-high heat
4. Pan sear scallops, approximately 3 mins each side
5. Plate salad and top with seared scallops

Serves 2-3

INGREDIENTS:

1 tbsp fresh ginger root, peeled and minced or 1 tbsp. of ginger paste (sold in produce section)
1/4 cup tamari soy sauce
2 limes, zested and juiced
2 tsp vegetable oil

1 tsp minced garlic
1 tbsp grill seasoning
1 lb flank steak (about 1 in. thick)


Preheat a grill to high heat

DIRECTIONS:

1. Combine ginger, tamari, lime juice, oil, garlic and grill seasoning in a large plastic bag.
2. Coat meat evenly and marinate 30 min. 
3. On high heat, grill 3 mins.  Turn 90° and grill 3 more mins.
4. Flip steak and grill 3 min. Then turn 90° and grill 3 more min. (total cook time is 6 min each side) 
5. Pull from grill and tent with foil, allowing to sit for 5 mins.
6. Slice thinly on an angle against the grain.

Serves 2-4

INGREDIENTS:Crock-Pot Chicken Cacciatore

1 ½ lbs boneless, skinless chicken breasts, cubed
½ lb fresh mushrooms, stems removed and cut in half
1 green bell pepper, chopped
1 small white onion, chopped
2 tomatoes, chopped (can substitute with a 12oz can of diced or chopped tomatoes)
6oz. can tomato paste
8oz can tomato sauce
1 tsp dried oregano
1 tsp dried basil
1 tsp garlic powder
1 tsp black pepper
½ tsp salt

DIRECTIONS:

1. Combine all ingredients in crock-pot and stir to evenly mix
2. Cover crock-pot and cook on low heat 5 hours
3. Serve over whole wheat pasta or rice

2008 Season
Chad End 2008
I am pleased to introduce you to my friend and client, Chad Zimmerman. He is a 32 year old all natural bodybuilder and works in advertising in Pickerington, Ohio. Although he began lifting weights in high school for sports, he has stayed committed to fitness for the last 15 years. Three years ago, while training for his first bodybuilding show, Chad suffered a serious injury, a complete tear of his Achilles tendon. The surgery and rehab were extensive and Chad was forced to forgo the '07 bodybuilding season. While many who suffer an injury like this would be to some degree permanently handicapped, let alone ever be able to train their legs to competition level again, Chad remained steadfast and dedicated to his goal of bodybuilding. He decided to spend the rest of '07 rehabilitating and trying to gain as much size as possible to get ready for the 2008 season. We started his diet again in February, and in May of 2008, Chad competed for the first time. Although he did not finish as well as he had liked, he did reach a long time goal. Now it's 2009, Chad is not only completely recovered from his injury, he is better than ever. I would like to invite you to follow his progress on the way into this new season. Our first show, May 2nd in Heath, Ohio will be put on by The Ohio Natural Bodybuilding Federation. This organization is for all natural bodybuilders and not only polygraphs its contestants, but also subjects winners to drug testing, something rare in competitive bodybuilding these days. Our goal for Chad is to come in to this show as a Light-Heavyweight (174¼ - 194 ¼ lbs) then follow up in peak condition for the Mike Francois Classic on May 9th.
