Greek Stuffed ChickenDIRECTIONS:
1. Pre-heat oven to 400 degrees. Coat baking sheet with cooking spray.
2. Combine goat cheese, red onion, olives, and black pepper. Stir to combine.
3. Pound each chicken breast to 1/2 inch thickness.
4. Place one fourth of goat cheese mixture in the center of each chicken breast. Fold chicken breast in half (closing the breast over the filling), pressing the edges together to seal. Repeat with the remaining chicken breasts and filling.
